White Chili
1 Tbs. vegetable oil
1 medium onion
1 clove garlic, minced
1 tsp. cumin
4 chicken breast, boneless skinless
45 oz. Northern white beans, not drained
15 oz. Garbonzo beans
12 oz. white shoepeg corn
8 oz. chopped green chilies
2 Tbs. chicken bullion
1 tsp. lemon pepper
Cook onions and garlic in oil. Add cumin and chopped up chicken breasts. Cook until brown. Add all remaining ingredients and simmer. Serve with sour cream, tortilla chips and Monterrey Jack cheese.
