Zucchini Beef Skillet
1 lb. of extra lean ground beef
1 cup chopped onion
1 diced green pepper
5 cups of thinly sliced zucchini
2 large tomatoes, peeled, seeded and diced
1 Tbs. pimento
1 cup of fresh or frozen corn
1 clove of minced garlic
1½ tsp. salt
¼ tsp. pepper
1 tsp. chili powder
parsley to taste
Brown hamburger, add peppers, garlic and onion. When hamburger is cooked through add remaining ingredients. Cover and simmer until vegetables are tender (about 10-15 minutes).
