Nonstick cooking spray
4 egg whites
11 ounces of mandarin oranges, preferably packed in juice not heavy syrup
½ cup applesauce (optional)
1 box lemon or yellow cake mix
8 oz crushed pineapple packed in juice
8 oz of nonfat vanilla yogurt
4 oz instant vanilla pudding mix
4 oz light whipped topping
Spray 9x13 pan with cooking spray. Beat egg whites with mixer until foamy. Drain mandarin orange juice into measuring cup, reserving the oranges. Add water or applesauce to mandarin juice to make 1 ¼ to 1 ½ cups according to amount suggested in cake mix’s no or low fat recipe. Add to egg whites and beat 30 seconds. Add cake mix, beat for 2 minutes. Pour batter into pan. Cover evenly with oranges. Bake 30 minutes at 350. Cool completely.
Combine pineapple (with juice) and yogurt. Add pudding mix and beat with mixer until thickened. (About 1 minute) Fold in whipped topping. Spread on cooled cake. Store covered in refrigerator.
