Potatoes Au Gratin with Sour Cream
1 bag of chunk-style frozen hash browns or 8-10 medium potatoes, cooked and cubed
¼ cup margarine (can be reduced to ⅛ cup)
1 can cream of chicken soup (can use reduced fat style)
2 cup sour cream (can use no fat substitute)
1½ cup shredded cheddar cheese (can use reduced fat cheese)
Leave frozen hash browns in bag, poke bag with fork and cook for twenty minutes in microwave oven. Heat margarine and soup until blended, stirring. Cool slightly. Blend in sour cream and cheese. Mix well and pour over potatoes. Bake at 325°F for 30 to 40 minutes. Serves 12 and makes great leftovers. 235 calories, 16.5 grams fat. Lower fat version 136 calories, 4.8 grams fat.
