Orzo and Spinach
Orzo and Spinach
One box orzo (16 ounces)
Fresh Spinach (4-8 ounces)
1 cube butter
2 Tbs. lemon juice
Lemon zest from one lemon
2-3 green onions
Boil the orzo until tender. Drain and set aside. Dice onion and saute in butter. Rough cut the spinach and wilt into the sauteed onions. Combine spinach and onions into the orzo. Add lemon juice and zest. Salt and pepper to taste.
