Herb Dijon Pork Chops
1 lb. lean boneless center-cut loin pork chops (¾ inch thick)
¼ cup fine, dry bread crumbs
2 tsp. dried parsley flakes
¼ tsp. dried whole rosemary, crushed
1/8 tsp. pepper
¼ cup country-style Dijon mustard
Vegetable cooking spray
Combine bread crumbs and next 3 ingredients. Brush mustard over both sides of chops and dredge in bread crumb mixture. Coat a large nonstick skillet with cooking spray; place over medium high heat until hot. Add chops; cook 4-6 minutes on each side or until tender.
