Chicken Fajita Pitas
1 lb. chicken cut in bite size pieces
pita bread
sliced green peppers
diced tomatoes
lettuce
spouts
grated Swiss or Monterey Jack cheese
salsa
Option 1: Marinade chicken in salsa and cook in hot skillet.
Option 2: Cook chicken in 1 Tbs. margarine, 1-2 cloves garlic, 2 tsp. lemon juice, and generous grinding of pepper. Serve in warm pita pockets and top with other ingredients. Approximately 382 calories per pita
Option 3: Cook chicken in non-stick frying pan with two teaspoons olive oil.
