Café Rio Shredded Chicken.
2½ lbs. chicken (4-6 boneless, skinless breasts)
¾ cup chicken broth
½ cup Zesty Italian Salad dressing
1 Tbs fresh lime juice
1 Tbs chili powder
1 tsp garlic powder
1 tsp paprika
1 tsp cumin
1 tsp salt
½ tsp freshly ground black pepper
½ tsp cayenne pepper, optional
In a mixing bowl whisk together non-chicken ingredients, pour mixture over chicken in slow cooker, cover. Cook on low heat 6-8 hours. Shred chicken. Cook shredded chicken in broth additional 30 minutes. Drain and serve for tacos, burritos, enchiladas, salad, etc.
