Chicken à la Grecque
4 chicken halves
1 onion, sliced
½ cup pitted Kalamata olives
4 cloves garlic minced
Juice & Zest of 1 lemon
¼ cup chopped fresh orecgano or (1 Tbs. dried)
¼ cup chopped fresh parsley (1 Tbs. dried)
2 cup chicken broth
1 cup white wine (or chicken broth or bouillon)
Salt and Pepper to taste
Toss the chicken halves in a bowl with the onions, olives, garlic, lemon juice and zest, oregano, and parsley. Add salt and pepper to taste. Bake uncovered at 350-degrees for 1 hour. Remove from oven, deglaze pan with chicken broth and wine. Pour over chicken. Serve with rice or couscous.
