White Bread
2 packages active dry yeast
½ cup water
4 cup milk, scalded
4 tsp. salt
4 Tbs. sugar
2 Tbs. shortening
Approx. 12 cup sifted flour
Soften active dry yeast in warm water. Combine hot milk, sugar, salt and shortening. Cool to lukewarm. Stir in 4 cups flour; beat well. Add yeast; mix. Add flour until moderately stiff. Knead 8-10 minutes. Shape in ball and place in lightly greased bowl, turning once to grease surface. Cover; let double (about 1 ½ hours). Punch down. Let rise again till double (about 45 minutes). Cut in 2 parts. Shape each in smooth ball; cover and let rest 10 minutes. Shape in loaves. Place in 2 grease loaf pans. Let rise till double (about 1 hour). Bake at 400 F about 35 minutes.
