2 cup butter, softened
2 cup granulated sugar
2 cup brown sugar
4 extra large eggs
2 tsp. vanilla
5 cup oatmeal, blended or processed into a fine powder
4 cup all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1½ tsp. salt
24 oz. chocolate chips
3 cup walnut or pecan gems
1 (8 oz.) Hershey bar, shredded
In a large mixing bowl, combine and cream the soft butter and both sugars. Mix in the eggs, one at a time, then mix in the vanilla. Measure out the oatmeal and pour into blender or food processor and process to a find powder. Add to the previous mixture, followed by the flour, baking soda, baking powder, salt, chips, walnuts, and shredded chocolate bar. Blend well, then roll into balls and place 2 inches apart on a baking sheet. Flatten each just a bit. Place in a preheated 375°F oven and bake for 10 minutes, then remove to a cooling rack. Makes 110-112 cookies and yes, you can cut the recipe in half.
