Chocolate Raspberry Cheesecake
1 Chocolate crumb crust
12 oz cream cheese, softened
½ C sugar
½ tsp vanilla
2 eggs
½ cup raspberries
1 tsp. margarine
1 oz unsweetened chocolate
¼ cup powdered sugar
1 tsp. dark corn syrup
2 tsp. boiling water
½ tsp. vanilla
Beat cream cheese until fluffy. Add sugar and vanilla. Add eggs one at a time. Fold in raspberries. Pour mixture into crust and set on baking pan. Bake for 35 minutes at 325. Cool completely then chill.
Combine margarine, chocolate, powdered sugar, corn syrup and boiling water over low heat until chocolate is melted. Remove from heat, add vanilla. Pour over chilled cheesecake and chill for 3 hours. Garnish with raspberries.
