Shredded Hash Brown Potatoes
3 medium potatoes (1 lb.)
¼ cup chopped onion or green onions (optional)
1 Tbs. cooking oil
½ tsp. pepper
½ tsp. paprika
Peel and shred potatoes (they should yield about 3 cups) Rinse and drain well. Pat potatoes as dry as possible. In a large mixing bowl stir onions and potatoes together. Add the oil, pepper and paprika; toss till potatoes are well coated. Spread potatoes in a 15x10x1 inch baking pan. Bake at 450° F for 25 to 30 minutes, stir once or twice while baking. Serves 4 at 131 calories per serving.
