Rancher Pork Chops
1½ lb. boneless center-cut loin pork chops (¾ inches thick)
Vegetable cooking spray
1 cup chopped onion
14½ oz diced tomatoes
4 oz chopped green chilies, drained
2 cloves garlic, minced
¼ tsp. salt
Coat skillet with spray, place over medium high heat until hot. Add onion. Sauté until tender. Add tomato and remaining ingredients (except pork); stir well. Add chops to skillet, spooning mixture over chops. Cover, reduce heat, and simmer 25 minutes or until chops are tender.
