Sadie Daniels' Coffee Cake
1 cup sugar
2 cups flour
2 tsp. baking powder
2 eggs, slightly beaten
½ tsp. vanilla
½ cup milk
½ cup melted butter
sliced apples or peaches 6-8 if fresh, or #2 can drained
sugar ½ cup on fresh fruit, ¼ cup on canned
1 tsp. cinnamon
lemon juice if using fresh fruit
½ cup melted butter
These are very sticky cakes. Use a Teflon pan if available. Spray with cooking spray, generously grease and flour pan(s). Turn out immediately after baking.
Combine dry ingredients, add milk, eggs vanilla and ½ cup of melted margarine. Mix well and spread in pan(s). Batter in very thick. Arrange fruit on top. Sprinkle with sugar and cinnamon. Add last ½ cup of melted margarine. Bake at 375 for 40 to 45 minutes. Yield two 8 inch rounds or one 9x13.
