Spicy Style Lentil Soup
2 medium onions, thinly sliced
3-4 carrots chopped
1 cup celery chopped
1 small turnip chopped
1 small jalapeño pepper, finely chopped (may used canned or bottled)
30-32 ounces broth or bouillon (vegetable or chicken best)
14½ ounce can of diced tomatoes in liquid
2 cups water
8 oz dried lentils
1½ tsp. chili powder
½ tsp. oregano
6 oz small shell pasta
fresh cilantro (garnish)
Spray pan with nonstick cooking spray. Sauté onions carrot, celery, turnip and jalapeño (See beginning note) until they are crisp/tender (10 minutes). Add broth, water, tomatoes, lentils, chili powder and oregano. Bring to boil and reduce to a simmer. Simmer 20-30 minutes or until lentils are tender. Add pasta and cook 10 minutes or until tender
