Marinade
2¼ cup Coca Cola
2 lbs pork ribs or pork roast
¼ cup brown sugar
Crock Pot
¾ cup Coca Cola
Marinated Ribs
Sauce
¾ cup Coca Cola
1 cup brown sugar
10 oz. can enchilada sauce
1 can green chilies
7 oz. can Chipolte Peppers in Adobo Sauce (Optional)
Marinade the pork in the Coca Cola and brown sugar for at least 1 hour, or overnight in the refrigerator.
Drain off the marinade. Put the ribs in a crock pot with the crock pot ingredients and cook for 3-4 hours on high or 6-8 hours on low until the pork is tender and shreds. Remove from crock pot and using a fork, shred the pork. Drain the crock pot, add the shredded pork along with the sauce items and cook for another 30 minutes. (If you want a smokier/spicier sauce, add the sauce ONLY (not the chilies) from 1 can of Adobo chilies to the sauce.)
