Chicken Divan
10 oz pkg. frozen broccoli spears
3 Tbs. flour
1 tsp. Dijon mustard
½ tsp. chicken bouillon
tsp. pepper
dash of nutmeg
6 oz of evaporated skim milk
⅛ cup of water
1 lb. of Chicken or Turkey cooked then cubed (1½ cups)
¼ cup shredded lower-fat natural Swiss cheese
1 Tbs. grated parmesan cheese
1 Tbs. thinly sliced green onion or snipped parsley
Cook broccoli and arrange in baking dish. In medium saucepan stir together flour, mustard, bouillon granules, pepper, and nutmeg. Gradually stir in milk till smooth. Stir in water. Cook and stir till thickened and bubbly. Stir in the chicken or turkey and Swiss cheese. Pour the sauce over broccoli. Sprinkle with parmesan. Bake at 350°F for 20 to 25 minutes. Sprinkle with green onion or parsley.
