Zucchini Bread
Zucchini Bread
3 eggs
2 cup sugar
1 cup oil
2 cup zucchini, grated
1 tsp. vanilla
3 cup sifted flour
1 tsp. salt
1 tsp. soda
2 tsp. cinnamon
¼ tsp. nutmeg
½ tsp. baking powder
½ cup chopped nuts (optional)
Combine and beat together: eggs, sugar, oil, zucchini, and vanilla. Sift together remaining ingredients, add to egg mixture and stir well. Pour into two well greased loaf pans. Bake 1 hour at 325°F.
