Sweet and Sour Beef
1 lb. beef stew meat
½ cup onion
One 13 oz can pineapple chunks
¼ cup brown sugar
2 Tbs. cornstarch
2 Tbs. soy sauce
1 cup green pepper, chopped
salt and pepper to taste
Cook beef and onions until meat is well browned, adding salt and pepper to taste. Drain pineapple reserving juice. Add enough water to juice to make 1 cup. Cook juice, cornstarch, sugar, until clear. Add soy sauce, green pepper. Place beef in a baking dish and pour sauce over it. Bake covered at 350°F for 45 minutes to 1 hour. Serve over rice with pineapple chunks.
Serves four at 400 calories per serving. (624 calories with 1 cup rice)
