Vegetarian Lentil Crockpot
1 cup brown lentils
28 oz. vegetable broth
2 Tbsp. dried onion
⅔ cup chopped onion
½ cup diced celery
⅓ cup chopped carrots
½ tsp. pepper
1 tsp garlic powder
14 oz. can coconut mile
2 Tbsp. curry powder
2 Tbsp. tomato paste
½ cup golden raisins
Rinse lentils under hot water in sieve. Place all ingredients into slow cooker on high heat. Cook for 3 to 4 hours on high or 6 to 8 hours on low heat.
