Andrea's Minestrone
2 cloves crushed garlic
2 cup onion
1 cup celery
1 cup carrots
1 Tbs. olive oil
1 28 oz. can tomato purée or diced tomatoes
2 qt. water
1 pkg. frozen chopped spinach
2 cup frozen string beans
½ tsp. thyme
2 tsp. basil
Beef or chicken bouillon to taste (5+ cubes)
1 cup uncooked macaroni
1 can kidney beans
2 sliced zucchini
Salt and pepper to taste
Sauté garlic, onions, celery, carrots, and oil. Add puree, water, spinach, string beans thyme, basil and bouillon and cook until carrots are done. Add macaroni, kidney beans, zucchini, salt and pepper and cook 10 minutes.
