Green Bean and Mushroom Casserole
Ingredients
18 oz frozen French style green beans
⅓ cup chopped onion
2 tsp. margarine
3 Tbs. fine dry bread crumbs
1 can cream of mushroom soup
¼ cup of plain nonfat yogurt or nonfat sour cream
2 Tbs. diced pimento
Preparation
Cook green beans and drain well. In saucepan cook onion in margarine until translucent. Stir in bread crumbs. In a large mixing bowl stir together the soup, yogurt or sour cream, and pimento. Stir in beans. Transfer to a 1 ½ Qt casserole. Sprinkle with bread crumb mixture. Bake in 350°F oven for 25 to 30 minutes or until mixture is heated through and crumbs are golden. Makes 5 serving at 121 calories per serving.
