Vegan Cafe Rio Rice

2 cups long-grain Rice
2 Tbs. Olive Oil
1 cup onion, diced
2½ cups vegetable broth or water
½ cup lime juice
4 oz. green chilies (optional)
Cilantro to taste
Saute onion in Olive Oil. Add rice. Stir to coat. Add remaining ingredients and bring to boil. Cook for 20 minute or until soft.
