Steak Diane
4 sirloin steaks, 4 ounces each
1 Tbs. margarine
4 Tbs. finely chopped shallots
2 Tbs. Worcestershire sauce
2 Tbs. Dijon mustard
1 Tbs. oil
salt and pepper
¼ cup fresh parsley
Put steaks between pieces of waxes paper and pound to about 1 inch thickness. Heat butter in a small saucepan and add shallots. Cook until lightly browned, then add Worcestershire sauce and the mustard and heat until bubbling. Keep sauce hot. Put oil in a large nonstick skillet and cook steaks over high heat for about 2 minutes on each side. Transfer to a serving dish and season with salt and a generous amount of freshly ground pepper. Pour sauce over steaks, sprinkle with parsley, and serve.
Serves 4 at 325 calories person.
