Red Pepper Chicken Pitas
2 tsp. olive oil
1 lb. boneless skinless chicken breast sliced thinly
1 thinly sliced red pepper
1 thinly sliced onion
7 oz. can of mushrooms drained
pita bread or sourdough hoagie buns
salt and pepper
Sauté chicken in olive oil. When chicken is browned add vegetables and 2-3 Tbs. of water to deglaze pan. Generously salt and pepper. Cook over medium heat until onions are translucent. Serve in warm pita or on toasted buns.
Makes 5-6 pitas at 355 calories.
