Oven Roasted Mushrooms and New Potatoes
1½ lbs. Small red or white new potatoes, cut into ½ inch chunks (about 4½ cups total)
4 Tbs. olive oil
1 lb. small white or cremini mushrooms, halved
1 cup sweet red bell pepper, cut into ½ inch chunks
2-3 cloves garlic, pressed or minced
½ cup green onions, chopped
1 tsp. salt
½ tsp. thyme, crushed
¼ tsp. fresh ground pepper
In a 9x13 shallow baking pan, toss the cut-up potatoes with the olive oil. Place the coated potatoes in a preheated 450 oven, uncovered, and bake for 10 minutes. Stir in the mushrooms, red pepper and garlic. Return to the oven and continue to bake uncovered, until the potatoes are nearly tender, about 15 minutes. Stir in all the remaining ingredients and return to the oven until all is tender, about 10 minutes.
