Eclair Cake
Pastry
1 cup water
½ cup butter
1 cup flour
4 eggs
Filling
1 large vanilla pudding (3 cups)
8 oz cream cheese
1 pint whipped cream
Pastry:
Melt margarine in water. Add 1 cup flour mix into ball. Remove from heat. Add 1 egg at a time mixing thoroughly before adding next egg, when all eggs are added spread into a greased 9x13 pan. Bake at 400 for 30 minutes. Cool. Pastry will look uneven and will settle.
Filling:
Prepare pudding, blend cream cheese into pudding. Pour over cooled pastry. Spread whipped cream over pudding layer. Top with chocolate shavings or drizzled chocolate syrup. Serves 12 at 465 calories per serving.
