Hawaiian Chicken
4 deboned chicken breasts
¼ cup chicken broth
½ cup flour
¾ cup sugar
½ cup corn starch
¾ cup vinegar
3-4 eggs
4 Tbs. ketchup
1 Tbs. soy sauce
Cut chicken into golf-ball size pieces. Dip in flour/corn starch mixture then in the egg. Brown chicken. Blot with paper towel and set in baking dish 1 layer deep. Dissolve sugar in chicken broth over low heat. Add remaining ingredients. Pour sauce over chicken. Bake at 350°F for 45 minutes, turning chicken pieces periodically. Sauce may be doubled if desired.
