Healthier Hearty Chicken Noodle Soup
2 tsp. or soup base
3 cups chicken soup stock
2 cups chopped carrots
2 cups chopped celery
¾ cup chopped onion
2 can reduced fat cream of chicken soup
¼ cup evaporated or fresh skim milk
2 cup cooked diced chicken
4 cups cooked noodles
salt and pepper to taste
Heat chicken soup base and stock together. Add carrots, celery, and onions, and simmer until vegetables are tender. Add soup and milk. Optional step --Thicken with roux (butter and flour). Add cooked chicken and noodles. Salt and Pepper to taste. Makes 10 one cup servings. *Can use ½ amounts of herbs listed in chicken/turkey soup recipe to replace soup base.
