Chicken with Leeks in a Pot
4 carrots sliced
2 stalks celery sliced
2 medium sliced leeks
2 cup chicken broth or bouillon
1 lb. boneless skinless chicken breasts
1 Tbs. basil
salt and pepper
Put above vegetables in order in crock pot. Place chicken breasts on top. Sprinkle basil and a small amount of salt on top, finish with a generous grinding of pepper. Pour liquid over. Cook for 2-3 hours on high. Drain stock and use to cook rice, orzo or couscous. Serve atop rice etc.. (Great Sunday meal)
Serves 4 at 246 calories before rice.
