Three Pepper Pasta
3 Bell Pepper (red, green and yellow) julienne cut
1 medium onion, julienne cut
2 cloves garlic minced
2 tsp. olive oil
3 Tbs. basil
1 tsp. sugar
2 Tbs. balsamic vinegar
12-16 oz cooked pasta
2-4 diced Roma tomatoes
Sauté peppers, garlic and onion in olive oil. When peppers are tender but firm add sugar and vinegar. Remove from heat. Gently add tomatoes and basil to mixture. Toss into pasta. Serve with parmesan. Serves 6-8 at 250 calories per serving.
