Sweet Coconut Curry
1 bunch green onion or ½ cup finely diced white or yellow onion
1-2 cloves garlic minced
1 tablespoon butter
2 T olive oil
¼ cup flour
1½ cups chicken broth or bouillon
½-¾ cup cream of coconut
½ cup milk
2-3 tsp curry
4-6 boneless skinless chicken breasts, diced or sliced and cooked (we like to sauté in a small amount of olive oil)
Sauté onion and garlic in butter/oil until tender. Stir in ¼ cup of flour. Stir in broth and cook until smooth and thick. Add cream of coconut, milk and curry. Stir and heat until blended and smooth. Can stir in chicken or just serve over chicken. Garnish with parsley, cilantro or green onion. Wonderful over hot rice and Asian vegetable especially pea pods, and red peppers.
