Tomato Potato Bake
1 cup vegetable stock
1 medium onion
2 cloves garlic
2 cups seeded, diced plum tomatoes
2 tsp. chopped fresh thyme or basil
2 large baking potatoes peeled and sliced ½ inch thick
salt, pepper, parsley
Sauté onion in stock until soft and translucent (15 min.). Add garlic and cook for 1-2 min. Add tomatoes & herbs. Simmer uncovered 10 minutes. Preheat oven to 350°F. Pour ⅓ sauce on bottom of pan, top with potatoes, salt and pepper. Repeat sauce and potatoes and top with sauce. Bake covered 40-45 minutes. Serves 2.
