Ingredients
nonstick cooking spray
2 egg whites
½ tsp. vanilla
tsp. cream to tartar
⅔ cup sugar
¾ cup flaked coconut
Preparation
Spray a cookie sheet with nonstick coating, set cookie sheet aside. Place egg whites in a small mixing bowl and let stand at room temperature for 30 minutes. Add the vanilla and cream of tartar to the egg whites. Beat with an electric mixer on medium speed till soft peaks form. Gradually add the sugar beating on high speed till stiff peaks form and sugar is dissolved, (about 7 minutes.) Gently fold in coconut. Drop by rounded tsp. 2 inches apart onto the prepared cookie sheet. Bake at 325°F for 12 to 15 minutes. Cool on wire rack. Makes about 30 cookies.
