Tomatillo Salsa
1½ lbs tomatillos
½ medium onion cut in quarters
1 clove garlic
2 Serrano peppers
1 Anaheim pepper
2 tsp. olive oil
1 tsp. salt
1/4 cup chopped cilantro
1-2 Tbs. lime juice
Peel and rinse tomatillos to remove the stickiness. Cut tomatillos in quarters. Cut and de-seed Serrano and Anaheim peppers. Toss tomatillos, peppers and onions in olive oil and lay out on a cookie sheet. Coat unpeeled garlic in olive oil and wrap in tin foil and put it with the vegetables on the cookie sheet. Roast for 15 minutes at 450 F. Unwrap and peel garlic, mince. Put all ingredients into food processor and blend until smooth. Add salt, lime juice and cilantro and blend.
