Lemon Coconut Squares
1 cup graham crackers
¼ cup melted butter
¼ cup sugar
14 oz. sweetened condensed milk
cup lemon juice
½ tsp. grated lemon rind
12 oz. Cool Whip
2⅔ cup coconut
Make graham crust in 9 inch. square pan using first three ingredients. Combine milk, lemon juice and rind. Fold in 3½ cup of COOL WHIP and ½ cup coconut. Spread mixture over crumbs. Sprinkle with coconut. Chill 2 hours. Serve in squares with whipped topping, lemon slices and mint leaves as garnish.
