• 1 pkg. (8 oz.) macaroni, cooked and well drained
• 1 cup leftover ham, cut into small dices
• 1 cup Longhorn cheese, cut into small dices
• 1 cup Swiss cheese, cut into small dices
• ¼ cup fresh Parmesan cheese, grated
• 1 Tbs. butter
• 1 Tbs. flour
• 1 cup milk
• Salt and fresh ground pepper, to taste
• Sweet Hungarian paprika for garnish
Prepare the macaroni following the package directions, then drain well. Stir in the 3 cheeses, mixing well. Pour the mixture into a sprayed shallow baking dish. In a small saucepan, combine the butter, flour, milk, salt and pepper. Bring the mixture to a simmer, then pour over the macaroni mixture. Sprinkle the paprika over the top. Place, uncovered, in a preheated 350 oven and bake about 30 minutes, and mixture should be crispy browned over the top. Serves 6.
