Oven Roasted Potatoes
2 lb. red potatoes quartered (can use other potatoes)
2 Tbs. vegetable stock
1 tsp. fresh rosemary or ¼ tsp. dried
2 tsp. fresh parsley or 1 tsp. dried
½ tsp. sage
2 tsp. paprika
2 tsp. pepper
1 tsp. salt
Spray baking sheet with vegetable oil spray. Toss potatoes in stock and herbs until well coated. Place single layer on pan and bake 30 to 60 minutes (depends on type and size of potatoes.) 1 cup serving is 163 calories.
