Spanish Rice
¾ cup water
½ cup chopped onion
½ cup chopped celery
1 clove of garlic minced
14½ oz of diced tomatoes
½ cup long grain rice
½ tsp. sugar
½ tsp. chili powder
1 tsp. salt
1 tsp. pepper
few dashes of hot pepper sauce
In a large skillet stir together water, onion, celery, and garlic. Bring to boil, reduce heat. Cover and simmer for 2 minutes or till the vegetables are tender. Do not drain. Stir in the undrained tomatoes, rice, sugar, chili powder, salt, pepper, and hot pepper sauce. Return to boiling, reduce heat. Cover and simmer for 20 to 25 minutes or till the rice is tender and most of liquid is absorbed. Serves 2 at 240 calories per serving.
