Italian Green Beans
1 lb. green beans
½ cup vegetable stock
1 onion thinly sliced
1 clove garlic
1½ tsp. oregano
¾ cup tomato peeled, seeded, diced
1 Tbs. tomato puree (optional)
salt, pepper
Cook bean al dente. Boil stock, add onion and cook about ten minutes. Add garlic, oregano, tomato and puree. Simmer 5 minutes. Add beans and simmer 5-7 minutes. Season with salt and pepper.
