Ingredients
1 lb. skinned boned chicken breast, cut into strips
1 medium onion
2 garlic cloves
2 Tbs. butter or margarine
1 Tbs. cornstarch
2 cup chicken broth or bouillon
2 large carrots sliced
2 large celery stems sliced
2 Tbs. fresh lemon juice
½ tsp. grated lemon rind
½ tsp. salt
1 cup snow pea pods
3 Tbs. chopped parsley
1½ cup uncooked Minute rice (substitute cooked long grain rice - reduce bullion to 1 cup)
Preparation
Sauté chicken, onion and garlic in butter until chicken is lightly browned, about 5 minutes. Stir in cornstarch and cook 1 minute. Add: broth or bouillon, carrot, celery, lemon juice, lemon rind and salt. Bring to a full boil. Stir in pea pods, parsley and rice. Cover; remove from heat. Let stand 5 minutes. Fluff with a fork. Makes 4 servings.
