Oven Fried Onion Rings
nonstick spray coating
½ cup fine dry bread crumbs
2 Tbs. margarine, melted
½ tsp. salt
½ tsp. ground red pepper (optional)
2 medium mild yellow or white onions sliced ¼ inch thick and separated into rings
2 slightly beaten egg whites
Spray a large baking sheet with nonstick coating. In a small mixing bowl stir together crumbs, melted margarine, salt and red pepper. Spread crumb mixture on a sheet of wax paper. Using a fork, dip the onion rings in the egg whites, then in the bread crumb mixture. Arrange coated onion rings in a single layer on the prepared baking sheet. Bake in a 450° F oven for 12 to 15 minutes. Serves 4 at 132 calories per serving.
