2 cups #2 bulgar wheat (can get at the bulk bin in Smith's)
2 bunches of Italian Parsley, finely chopped
About 40 mint leaves, finely chopped (more or less to taste)
6-8 green onions, chopped.
2 cucumbers, peeled and chopped.
5-8 medium tomatoes, finely chopped and slightly drained.
½ cup olive oil (extra virgin makes for stronger taste)
½ cup lemon juice
salt to taste
Rinse and cover bulgar wheat with water. Let bulgar soak for 45 minutes or until soft. Chop parsley, mint, onions and tomatoes. Drain bulgar by pressing between your hands to squeeze out all the water. Mix bulgar, parsley, mint, onion, cucumber and tomato. Add oil, lemon juice and salt to taste. Serve as a salad, or a dip with pita chips, or as a stuffing inside iceberg lettuce. Serves 6-10.
